- 1 precooked beetroot
- 1 tsp Irish rapeseed oil
- 1 tsp balsamic glaze
- 3 sprigs of thyme

- Preheat the oven to 180°C.
- Put the beetroot on an ovenproof tray, cut across their width at 3mm intervals, but don’t slice all the way through so the beet will stay in one piece.
- Drizzle the rapeseed oil over the beetroot, sprinkle with sea salt and place some thyme in the cuts you’ve made.
- Remove film from the cottage pie and place in the preheated oven together with the beetroot, set a timer for 30 minutes.
- After 30 minutes, finish the beetroot with some balsamic glaze and serve alongside your Kinsale Bay Cottage Pie.
