Tray Baked Hake made with Kinsale Bay Food Company Tomato & Basil Soup

  • Ingredients
  • 1 x 400g tub of Kinsale Bay Food Company Tomato & Basil Soup
  • 4 x 150 g Hake fillets, skin off, pin-boned
  • 3 cloves of garlic
  • olive oil
  • 1 red pepper
  • 2 Spring Onions
  • Fresh Basil Leaves
  • Method:
  • Pre-heat the oven to 200°C/400°F/gas 6.
  • Peel and finely slice the garlic. De-seed and dice the red pepper. Chop the spring onion.
  • Drizzle a little olive oil in a 20cm x 30cm roasting tray. Place the Hake fillets in the tray.
  • Divide the garlic, red pepper and spring onion evenly over the hake.
  • Pour the Kinsale Bay Tomato & Basil Soup over the 4 fish pieces.
  • Season with some cracked black pepper. Cook in the oven for around 25-30 minutes or until the fish is cooked through – check by cutting into the thickest part of one or two of the fillets; they should be pearly white and not transparent.
  • Garnish with the basil leaves. Serve with baby potatoes and mixed green salad.
